Dr. Peter and Judith Rothenberg invite you to join them and noted chef,
cookbook author, food activist and local legend Claire Criscuolo, for
an intimate, five-course, gourmet dinner prepared from seasonal, local and organic food,
served with selected wines by the chefs at Basta Trattoria.

Menu
All courses will be paired with Italian wines produced by small family owned vineyards

Small plates

  • Sweet and white potato pancakes, made using local and organic potatoes, topped with Prosecco and cinnamon poached local apples
  • House-made, wood-oven roasted local flounder pate, over little rounds of local corn polenta Pasta Fazzoletto, house-made, "pasta handkerchief" folded over a filling of local and organic Tuscan kale and locally made, hand-packed ricotta cheese, in a pool of herb scented marinara sauce, drizzled with truffle oil

Salad

  • Maple roasted local butternut squash and local pears, over organic baby greens, with toasted hazelnuts and crumbled Ricotta Salata cheese, drizzled with pomegranate-Vin Santo dressing

Entrees - select one

  • Rustic organic split chicken, lemon and rosemary rubbed,wood-oven roasted organic split chicken, accompanied by slow-roasted local fennel, local organic tomatoes, and organic fingerling potatoes
  • Grilled wild and line caught salmon, topped with Cerignola olive, lemon, and caper tapenade, over local corn and chive custard, accompanied by braised local escarole with toasted pine nuts
  • Penne rapini, organic semolina pasta, tossed with braised broccoli rabe, wood-oven roasted organic tomatoes, roasted organic garlic, organic white beans, and organic extra virgin olive oil, drizzled with house-made limoncello

Desserts

  • Italian semolina apple torta with organic whipped cream
  • Dark chocolate-pepperoncini cakes with organic whipped cream and toasted pistachios

$100 per person includes dinner, wine and program.
